Carrot, Beetroot and Kale Juice

Beetroot is a wonder vegetable! I love its earthy flavour and deep rich colour. It is not only a feast for the eyes, but also incredibly good for you! Scientific research has found that drinking beetroot juice boosts your stamina and could help you exercise for up to 16% longer. A University of Exeter led-study shows for the first time how the nitrate contained in beetroot juice leads to a reduction in oxygen uptake, making exercise less tiring. No wonder top athletes favour it in their diet. It is also full of antioxidants and is fantastic for people suffering with anemia. Drink this juice in the morning to get you alert for the day, or before exercise to give you a boost like no other! Team it with a matcha smoothie and you’ll be raring to go. Serves 3-4

  • 6 carrots
  • 3 raw beetroot
  • 2-3 kale leaves
  • 2 inch piece ginger
  • 1 lemon, juiced
  1. Push the carrot, beetroot, ginger and kale through the juicer*
  2. Squeeze the lemon and mix with the juice.
  3. Serve over ice if desired.

*I have a Phillips HR1861 juicer and I love it! I have had it for 5 years with daily use, including juicing 40kg apples from my parent’s orchard this Autumn and it is still going strong! I love the juicer because there is no preparation or chopping before juicing as it takes whole apples, carrots, beetroot, greens – it is just so easy, and also easy to clean!
