I made these fudgy coconut brownies for a bake sale we are hosting at work to raise money for WaterAid. Therefore, they are not full of beetroot, black beans or any other substitute I usually use to make brownies “healthier”. However, I cannot make a recipe without meddling a little, so to make the brownies even more coconutty, I replaced butter with coconut oil. They are therefore dairy-free for all you lactose intolerant folks (however not vegan). They...

I had an impromptu dinner party last night when my vegan friend Nathan came around and cooked me and my housemates an amazing vegan sweet potato shepherd’s pie, which was a real treat as I am usually the one who cooks. I couldn’t let him do all the work though so I offered to make a vegan dessert. Although cookies may not be the traditional dinner party dessert, in my opinion a crunchy, chocolaty cookie dipped...

When I first came across this black bean brownie recipe, I admit I was dubious. I am all for making an indulgent treat healthier (so you can eat more, right?) but using beans as a substitute for flour and butter? It just sounds odd! Wow, these little grain-free pancakes taste AMAZING, and only contain 3 ingredients! I got the idea from my housemate Edna, who makes the strangest sounding omelette with egg, banana, spinach, cinnamon and almond butter. I think she got the recipe from a colleague when she was working in Glasgow. The difference between mine and Edna’s recipe (bar the spinach) is that I mash the banana and nut butter into the batter, whereas she adds it as a filling to stuff her omelette....

These rich little chocolate delights are wonderful to satisfy any sweet craving, yet they only contain 6 ingredients! You can use whatever nut butter you prefer, just ensure it is of good quality and preferably 100% nuts. If you have bought salted nut butter, omit the salt out of the below recipe. I made my own peanut butter by blending peanuts for 2-3 minutes on the highest setting of my blender until it turns...

These raw chocolate brownies with avocado frosting feel so decadent but are made from completely unrefined, raw vegan ingredients. I seem to be on a bit of a raw streak at the moment, not intentionally, it is just what I’m craving. The base of this recipe was dreamed up whilst attempting revise for a recent interview. Thankfully the whole process took less than half an hour as there was no cooking involved so once...
