I used to eat these apple and nut butter slices nearly every day for my elevenses before I went to the gym at lunch with my irreplaceable gym buddy Laura. Sadly when I moved away from Exeter this recipe, along with my strict gym routine, was forgotten about… until today! I was routing around for a mid morning snack and loe and behold in the fruit bowl there was one, last apple. It was my housemate Edna’s… an apple alone is not worth the wrath of stealing one’s housemate’s food, but then above it on the spice rack was cinnamon! Memories of this wonderful snack came flooding back to me and I had to have it! So I stole it.
This is barely a recipe as it only has 3 ingredients. Use whatever nut butter you like, I really like almond or sesame seed butter (a chunkier version of tahini), but peanut, hazelnut, cashew or anything works well! Make it even more decadent by mixing in half a teaspoon of cocoa powder into the nut butter. If it becomes unspreadable add a little coconut oil into the mix. Serves 1, easily multiplied.
Apple and Nut Butter Slices
- 1 Crunchy Apple
- Nut Butter
- ¼ tsp Cinnamon
- Core and slice the apple. Cutting the apple horizontally into rounds looks nice (I forgot about this technique but slices works well too).
- Spread a little nut butter on each slice or round of apple.
- Sprinkle with a little cinnamon and serve.
- ½ tsp Cocoa powder
- ½ tsp Coconut oil
- Sesame seeds
